  1. Creamy Garlic Mushroom Toast




   INTRO!!!

Nothing can compare to waking up to the rich, creamy garlic mushroom toast aroma. Full of flavors and bearing preparation that lasts just five minutes, it is an energizing start to the day.


INGREDIENTS

  • 6–7 button mushrooms, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp butter or olive oil
  • 2 tbsp fresh cream (or thick milk for lighter version)
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • 2 slices of crusty bread (sourdough or whole wheat)


METHOD

  • Heat butter in a pan over medium heat.
  • Add minced garlic; sauté until fragrant.
  • Add mushrooms; cook for 3–4 minutes until soft and golden.
  • Stir in cream, salt, and pepper; cook for 1 more minute.
  • Toast your bread slices separately.
  • Spoon the mushroom mixture generously over toast and garnish with parsley.


COZY TIP!

Add a poached egg on top for extra protein or drizzle a bit of truffle oil for a fancier touch!


2. Grilled Veggie & Pesto Sandwich with Fresh Salad




                    INTRO!!!

     This sandwich is a classy yet easy lunch option that feels like a gourmet café meal. Fresh             grilled veggies, creamy pesto, and a crisp salad make it colorful and satisfying.



INGREDIENTS

    For the sandwich:

    • 1 small zucchini, thinly sliced

    • ½ red bell pepper, sliced

    • ½ yellow bell pepper, sliced

    • Olive oil for brushing

    • Salt & pepper

    • 2 tbsp pesto (store-bought or homemade)

    • 2 slices of hearty bread (multigrain or ciabatta)

    • A few fresh basil leaves

    For the salad:

    • A handful of mixed salad greens

    • 5–6 cherry tomatoes, halved

    • Olive oil & lemon juice dressing

    • Salt & pepper


     METHOD

    • Brush veggies lightly with olive oil; season with salt & pepper.
    • Grill on a hot pan or grill until slightly charred and soft.
    • Toast bread slices lightly.
    • Spread pesto on one side of each bread slice.
    • Layer grilled veggies and basil leaves; close the sandwich.
    • For salad, toss greens and tomatoes with olive oil, lemon juice, salt & pepper.


    COZY TIP!


    You can possibly add a layer of mozzarella or feta that creates a nice creamy taste inside your sandwich.


    3.Lemon Butter Herb Pasta with Roasted Cherry Tomatoes




         INTRO!!!

    The pasta is great for dinner because it feels elegant yet so easy. It is covered with lemon butter and herbs, and the sweet roasted tomatoes just make the whole thing light and bright with tons of flavor.

     

    INGREDIENTS

    • 150 g spaghetti or fettuccine

    • 1 cup cherry tomatoes

    • 2 tbsp olive oil (for tomatoes)

    • Salt & pepper

    • 3 tbsp butter

    • 1 garlic clove, minced

    • Zest and juice of 1 lemon

    • 2 tbsp chopped fresh parsley or basil

    • Grated Parmesan (optional)

    METHOD

    • Preheat oven to 200°C (390°F). Toss cherry tomatoes with olive oil, salt, and pepper; roast for 15–20 min until blistered.
    • Meanwhile, cook pasta as per package instructions; reserve some pasta water.
    • In a pan, melt butter over medium heat; add garlic and cook until fragrant.
    • Add lemon zest, juice, and a splash of pasta water to create a silky sauce.
    • Toss cooked pasta into the sauce; add chopped herbs and mix well.
    • Serve pasta topped with roasted tomatoes and Parmesan.

    COZY TIP!

    Just before you serve, drizzle over with extra virgin olive oil for the most flavor.
